Matoke (also known as Ebitookye) refers to the green highland bananas that are a dietary cornerstone in Uganda, Kenya, and Tanzania. Unlike the sweet yellow bananas we eat raw, Matoke is a starchy cooking variety. When raw, it is hard and green; when cooked, it softens to a beautiful golden-yellow with a creamy, delicate texture and a mild, savory flavor.
